Jalapeño Egg Salad

i don't typically like making lunch at home. it's nice to be able to get out of the house in the middle of they day for a bit. a lot of times c and i (mostly i) really look forward to driving somewhere fun for lunch or brining something back home and having a picnic on the living room floor.

however, for the sake of not spending a LOT of money on lunch every week i'm trying to do better. this recipe, from homesick texan {an awesome blog}, has definitly been my favorite as of late. i'm pretty picky but i thought this was delicious.

Jalapeño egg salad

Ingredients:
6 hard-boiled eggs
1 pickled or fresh jalapeño, seeds and stems removed, diced
1 green onion, finely chopped, green part only (about a tablespoon)
1 teaspoon chopped cilantro
1/4 teaspoon ground cumin
1 tablespoon mayonnaise
2 tablespoons yellow mustard
1 teaspoon lemon juice
Salt, black pepper and cayenne to taste
Bread or tortilla chips for serving

Method:
Peel the eggs and then roughly chop. Gently stir in the jalapeño, green onion, ground cumin, mayonnaise, mustard and lemon juice. Add salt, black pepper and cayenne to taste.

Serve either on bread for a sandwich or tortilla chips as a dip.

Yield: about 2 cups

I like pretty much any kind of pasta with pesto sauce, or just butter and parmesan. I really like chopping up tomatoes and cucumbers for a salad, with or without a smidge of italian dressing. In the summer I also really love sauteing zucchini and yellow squash in a little butter, also with some parmesan on top.

That grilled cheese and those baked tomatoes look so amazingly good. Make them and tell me how they are.

Those all look so yummy! All I ever eat for lunch anymore is slim fast. Lame :(

I am on an egg salad kick right now - I will have to try that recipe.

I love tomatoes, cucumbers, mozzarella, basil and balsamic together.

I also love to make a granny smith and munster grilled cheese. So so yummy. On a wheat or sourdough bread, or white - what ever I have on hand, but the cheese mixed with the sour apple is yum yum!
